4 slices bacon4 chicken breasts
4 chicken thighs
2 boxes or large cans chicken stock or broth
1 1/2 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
1 large onion diced
3 cloves garlic minced
2 cans Ro Tel tomatoes
1 can whole kernal corn
1 can pinto beans (or black beans)
1 can green chilis
6 red skinned potatoes (skin on!)
Fresh cilantro
Sliced avocado
Sour cream
Directions
In a large dutch oven, brown bacon. Remove bacon and discard (or eat!).Wash and dry chicken. Salt and pepper both sides.
In bacon grease, brown chicken on both sides. When 2nd side is browned, add onions and garlic. Saute.
Add chicken stock and Ro Tel tomatoes. Cook until chicken is done. Remove chicken. Cut chicken into bite sized pieces.
To chicken broth, add potatoes and cook until almost done. Leave skin on potatoes and don't use starchy potatoes!
Add chicken, corn, beans and chilies. Cook for a few minutes longer.
To serve, garnish with sliced avocado, sour cream and fresh cilantro!
