1 Whole Cooked Traditional Rotisserie Chicken2 cans Rotel Habanero style
1 med-large sized pickled jalapeno pepper
1/4 c roughly chopped cilantro
1 small tomato diced
Salt to taste
1 bag shredded lettuce
1 bag shredded mild cheddar cheese
1 package of pre-made tostadas (I didn't have to heat mine, they were ready to go)
Directions
Open both cans of rotel and put into blender, then add cilantro, jalapeno pepper and blend to smooth consistency. Add salt to taste. Set blended Rotel aside. Remove skin from chicken then de-bone and shred chicken. Place chicken into a large skillet. Start by adding 1/2 of the sauce and then do a taste test, if you want more heat add more sauce. Let simmer for 30 minutes.Once chicken is ready then start to assemble your tostada. Place chicken on tostada, add lettuce, cheese and diced tomato. You are ready to serve. You may have leftover sauce, if so serve with chips!
