Recipe Ingredients

1/2 c. butter
8 oz. cream cheese, softened
1/4 tsp. of salt
2 tsp.chili powder
2 c. shredded Mexican blend cheese, divided
1 c. milk
1 can Original Ro*Tel Diced Tomatoes & Green Chilies
9 oz. oven ready (no-boil) lasagna noodles
2 tsp. taco seasoning mix
2 c. of cooked, chopped chicken
1 c. crushed nacho flavored tortilla chips
1 c. sour cream
1/2 c. chopped tomatoes

Directions

Preheat oven to 400 degrees Fahrenheit.

Melt butter in a medium, non-stick saucepan over medium heat.

Add cream cheese and stir with a wooden spoon until it begins to melt down. Add salt, and chili powder. Add 1-1/2 c. of the shredded cheese and whisk it to help break down the cheese.

Add milk, a little at a time, whisking until smooth and creamy. Add Ro*Tel tomatoes w/chilies and stir well.

Remove from heat when sauce reaches desired consistency. Sauce will thicken a little as it sits.

Spread about ½ c. – 1 c. of cheese sauce on the bottom of a 9” x 9” casserole dish. Place one layer of the uncooked lasagna over the sauce, with the noodles slightly overlapping each other. Don’t worry if the noodles don’t fit right to the edge of the pan, as they will expand as they bake.

Sprinkle the taco seasoning mix over the chicken. Place a layer of chicken over the noodles. Pour more of the cheese sauce over the top. Continue this process until all ingredients are used up. Alternate the direction of the lasagna sheets in subsequent layers.

The final layer will be the lasagna sheets plus the remaining cheese sauce, ½ c. shredded cheese, and crushed tortilla chips.

Cover with foil and bake in the preheated oven for 25 minutes. Remove foil and bake another 10 minutes.

Serve warm with sour cream and chopped tomatoes.
